Ovocný hrnčekový koláč

When we visit my husband’s relatives in Slovakia, we often stay at a family house that is a shared space for gatherings and get-together. Because I do not know every drawer and cupboard in this kitchen, I often turn to this simple sheet cake when baking there. Rather than taking the time to hunt down a measuring cup or food scale, I need only grab one mug from the shelf to measure out all of the major ingredients. The recipe is also very flexible when it comes to its fruit additions. The cake shown above is made with peaches and raspberries, but the possibilities are endless: cherries, blueberries, strawberries, apricots, plums, kiwi…

Storing & saving

This cake can be stored on the countertop and is best eaten within 2 days

Baking note

While you can substitute almost any fruit you like in this recipe, be careful with larger, more moist fruit such as apricot or peach. These may require a longer baking time.

Ingredients

Dough Cesto

1 mug of caster sugar 1 hrnček kryštálový cukor

2 eggs 2 vajce

2 mugs of flour 2 hrnčekov polohrubá múka

2 3/4 tsp (12 grams) baking powder 1 kypriaci prášok

1/2 mug of vegetable oil 1/2 hrnček olej

1 mug of milk 1 hrnčok mlieko

4 tsp (20 grams) vanilla sugar 1 vanilkový cukor

Fruit of your choice Ovocie podľa vašej chuti

  • Preheat the oven to 350 F (180 C)

  • In a medium-sized bowl, combine the eggs and caster sugar.

  • In a larger bowl, mix together the flour and baking powder.

  • Add the egg and sugar mixture to the larger bowl of flour, then combine with the remaining ingredients except for the fruit.

  • Prepare the fruit by washing and cutting into small pieces.

  • Prepare a 9”x14” baking sheet with butter and flour or baking spray.

  • Pour the batter into the baking sheet.

  • Arrange the fruit in the batter. It doesn’t need to be pushed down into the batter very far; the color at the top of the cake makes a nice decorative pattern.

  • Bake for 22-25 minutes. Check with a skewer for doneness.

  • Slice and dust with powdered sugar before serving.

Teamwork

This cake is a wonderful one to prepare with little bakers in your home. Simple measuring and mixing tasks can be safely delegated to even the youngest helpers. Make it a team effort!
